Sometimes, the moments that change our lives come from cataclysmic realizations. For Jane Yuan, it all started with a sliver of candied orange. Shaved down to near transparent perfection and candied to a sophisticated sweetness, her “eureka” moment was born as she tried to recreate the garnish using home methods of slicing and dehydrating. Soon, she had created the crisp of her dreams, hesitant to share the prototype but eager to put her positive creation into the real world – also known as bellies of family and friends. The response was overwhelmingly positive, especially when Jane’s brilliant pairings of crisps with specific wines, cheeses, meats, and desserts. In November 2012, Simple and Crisp was officially launched with its fate sealed in success with nods from Martha Stewart Living, Oprah Magazine, and Rachael Ray.

Today, the Bellevue native turned Seattle resident lets her imagination run wild in a SoDo facility with new flavors, pairings, and collaborations with other artisans. She spends her days overseeing production, quality control, and perhaps most importantly, research and development into new flavors of crisps, such as pineapple, crisp raspberry puree, and pressed cranberry. It’s no surprise, of course, that due to Simple and Crisp’s exploding success record, the company has grown from three employees to twelve, selling over 500 cases to specialty food stores, bakeries, markets and restaurants nationwide who can’t get enough of these innovative vehicles of flavor.
