Known as Kahiltna Birchworks’ “first run” syrup, this is a rich, spicy-sweet syrup with a gorgeous caramel flavor. Certified organic and produced without additives, preservatives, or artificial flavors, this syrup also packs a healthful punch including vitamins and minerals, potassium, manganese, thiamin and calcium. This year, 12,000 trees were lovingly hand-tapped to produce “Kahiltna Gold”, which produces 110 gallons of sap that is later boiled down into 1 gallon of birch syrup. Pure and complex, this syrup is simply divine on sourdough pancakes, homemade Belgian waffles, or even as a sweet-yet-savory complement to baked salmon and other fish. If you’re bold enough to try it, stir in a spoonful with your morning coffee for the full Alaskan effect!
