The beauty of this dish, besides the fact that it is ridiculously delicious, is that you can basically add any leftover vegetables and you've got yourself a winning breakfast or dinner meal. Add the crushed nora chilies, beans and reduce heat to a simmer. Mash some of the beans with the back of the spoon, remove from heat, cover and keep warm. 2) Warm the green chile sauce: Warm the green chile sauce in a small saucepan for about 10 minutes. 3) Cook the eggs: Cook the eggs to your preference and top with a light sprinkle of salt and pepper. 4) Warm tortillas: In a cast iron pan, heat tortilla flipping until warmed through. 5) Assemble the Huevos Rancheros: On each serving dish, top the tortilla with the spicy black bean mixture, green chile sauce and eggs. Garnish with cheese, cilantro, avocado, and jalapeños and enjoy!
